Anise Hyssop
Agastache foeniculum
Perennial to 1 metre, grows in most soils in full to part sun. Provides a display of beautiful blue/purple flowers all summer. This plant has a mild aniseed flavour which makes it suitable as a substitution for French Tarragon in chicken, fish and vegetable dishes. Makes a brilliant sweet tasting herb tea. Bees love the flowers and can produce an abundance of fragrant honey. Dried leaves and flowers make a great addition to pot pourri.
